Back to back Sprints?
I'm trying to get my hands around how sprints are managed within Ninja. Although our sprints are 10 days of effort, we also require a day or town for planning and demos. So there is downtime where stories are essentially done and other things outside of the sprint are addressed. Does the sprint setup allow for that?
Similarly, due to other projects, planning, scheduling conflicts, etc. my team also takes time off between sprints, or at least between epics. Does Ninja allow for this slack-time or are sprints always considered back to back?

You can adjust your sprint start time to give yourself some slack, but you can only ever adjust your current sprint, since the future sprints are all virtual. So, let's consider this scenario, your current sprint "Sprint 0" rolls over and now "Sprint 1" is your current sprint. You need to delay the start of this sprint a few days. So, all you need to do is click on the current sprint header and modify the start date and end date to whatever you choose.

BTW Sprint #0 should be re-labeled Sprint #1. During an Agile/Scrum presentation, someone had to remind this engineer that days don't start with 0. So, I'm passing this along - neither do sprints.

We chose the name Sprint 0 on purpose because in our experience is usually for a lot of infrastructure and setup. The real work often doesn't start until Sprint 1.
