Both Admin & Product Owner Role
The Admin and Product Owner roles appear exclusive. I'd like to setup myself as both the Admin and the Product Owner but this doesn't appear to be allowed.

The product owner actually has less permissions than an admin. So, what you want to do is make yourself and admin, then select 'notify' so you receive story delivery notifications.

As the admin, I'm not able to grant myself another role such as Product Owner. I setup another account with that role instead.

Am I misunderstanding you here? You don't need to make yourself a product owner. You are already an admin, which means you get the same privileges as a product owner plus more.
And, you can never change your own role because that would mean that a team member could make themselves an admin if they wanted to.
